  • 2 cups cooked white rice (preferably day-old rice)
  • 1 cup cooked chicken, diced or shredded
  • 2 eggs, beaten
  • 1 cup mixed vegetables (such as peas, carrots, and corn)
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Optional garnishes: chopped green onions, sesame seeds

Instructions for preparation:

1. Prepare Ingredients:

  • If you don’t have leftover rice, cook the rice according to package instructions and let it cool completely or refrigerate it for a few hours.
  • Cook and dice or shred the chicken. You can use leftover roasted or grilled chicken for added flavor.
  • Beat the eggs in a bowl and set aside.
  • Chop any vegetables if using fresh ones.

2. Cooking the Fried Rice:

  • Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil.
  • Add the beaten eggs to the pan and scramble them until cooked. Remove the eggs from the pan and set aside.
  • In the same pan, add another tablespoon of vegetable oil. Add the minced garlic and stir-fry for about 30 seconds until fragrant.
